Description
Vinification: Barolo DOCG Cerviano-Merli is produced with Nebbiolo grapes coming from our vineyard located in the commune of Novello. The hand-picked grapes are selected, destemmed and crushed. Fermentation and maceration take place for about 10 days in stainless steel tanks at a controlled temperature between 28 and 30 °C. After malolactic fermentation, the wine is aged for 18 months in oak barrels. It then continues its refinement in the bottle, where it will complete its maturation.
Organoleptic characteristics: Garnet red colour. The nose is intense, with hints of withered roses, ripe red fruits and spices. On the palate it is harmonious and robust. The drinkability is velvety and well balanced with a very long finish.
Pairings: red meats, game and mature cheeses.
Ideal serving temperature: 16° – 18°
