Spumante Brut Rosè Metodo Classico Nebbiolo d’Alba 2017 – 6 bottles
Vinification: The Nebbiolo grapes (100%) are harvested by hand, before the traditional ripening. The Nebbiolo is crushed and left to macerate for about 6 hours. After soft pressing, the skins are separated from the must, which decants in temperature-controlled tanks at a controlled temperature of 18°C. Fermentation ends in about 20 days. The wine is bottled and spends about 36 months maturing on the lees, with remouage of the bottle, before disgorging.
Organoleptic characteristics: Delicate notes of elderflower and hints of citrus. In the mouth, acidity and softness are well balanced and provide a savoury, rounded glass. Very fine and persistent bubble.
Pairings: Excellent as an aperitif. Ideal with starters, sliced meats and fish dishes.
Ideal serving temperature: 6° – 8°
